The CT-1 eliminates the possibility of human error in the cooking process for batch sizes up to 100lbs, maximizes product yields, naturally tenderizes proteins, and reduces the need for additives and preservatives. Foods cooked sous vide retain more moisture, flavor, and nutritional value than those prepared through higher-heat methods.
